How to keep them crunchy
Humid air is the biggest enemy of roasted cashews. Close the jar tightly after every use and keep it somewhere cool and dry, away from the stove and direct sunlight. Use a dry spoon to scoop them out. For shelf life, please check the expiry date on the pack.

- Fry garlic and shallots in a little oil until fragrant.
- Add your choice of vegetables (carrots, long beans) and an egg, and stir until cooked.
- Add cold rice and season with soy sauce — go easy on the salt since the cashews are already salted.
- Turn off the heat, then toss in a handful of roasted cashews so they stay crunchy.
Tip: add the cashews right at the end. Cooked too long with the rice, they lose their crunch.
