The 3 litre size holds the same Olivko extra virgin olive oil:

- Early harvest and cold extracted
- Free acidity below 0.2% (lab result: 0.18%), against the IOC limit of 0.8%
- Total polyphenols of approximately 500 mg/kg

Using a large format well
- Decant some into a smaller dark glass bottle for daily use.
- Keep the 3 litre box somewhere cool and dark, away from the stove.
- Make sure the tap is fully closed after each pour.
- Use the oil within a reasonable time once opened.

Planning stock for catering
For a catering kitchen, work out how much olive oil you use per event or per week, then buy to match. It is better to buy more often in a size you will finish than to hold stock for too long.
- Note the date each box is opened
- Use older boxes first (first in, first out)
- Keep unopened stock in a cool, dark storeroom
Batch recipe: dressing for 20
- Mix 300ml of Olivko with 100ml of lemon juice in a lidded container.
- Add two teaspoons of salt, one teaspoon of black pepper and two crushed garlic cloves.
- Shake or whisk until combined, and toss through salad just before serving.
