Why 500ml is the most practical size
Olive oil does not improve with age. Once opened, it meets oxygen every time the cap comes off. A bottle too big for your use stays open too long; one too small runs out too fast. For most kitchens, 500ml is the sensible middle.

How to use it
Raw — where the flavour is clearest
- Green salad with a squeeze of lemon and a pinch of salt
- Hummus or baba ganoush just before serving
- A bread dip with za’atar
- Lentil soup, vegetable soup or freshly cooked rice
Moderate-heat cooking
Use it to sauté vegetables, eggs, chicken or fish. Keep the heat moderate and do not let the oil smoke. Many families keep one bottle for cooking and another on the table for finishing.

Single bottle or bundle?

Storage

Recipe: simple hummus
- Blend one tin of drained chickpeas with two tablespoons of tahini.
- Add the juice of half a lemon, one garlic clove and a pinch of salt.
- Add a little cold water as you blend until smooth.
- Spoon onto a plate, make a well in the middle and pour in Olivko generously.
Serve with pita bread or raw vegetables. This is where extra virgin olive oil shows its flavour best.
How to taste olive oil like a pro
Pour a little Olivko into a small glass, warm it in your palm, then smell it. Take a small sip and let it coat your tongue. Fresh extra virgin olive oil usually smells green and leaves a slightly bitter or peppery feeling at the back of the throat — a normal trait of fresh oil, not a sign it has gone off.
Early harvest and cold extraction: what they mean
Early harvest means the olives are picked earlier in the season, while still green. An early harvest gives a greener, fresher-tasting oil.
Cold extraction means the oil is extracted without high heat. For Olivko, this happens within roughly 3–4 hours of picking — keeping that window short helps preserve the oil’s freshness and natural character. Both steps are part of why Olivko’s acidity stays below 0.2%.
